What to do with those Plums...
My husband loves Costco.
I think he views the jaunt as a badge of suburban honour. I view the parking lot as a blatant symbol of rampant consumerism. He views it as an opportunity to “get a good deal” on whatever he didn’t realize he was missing. I cringe witnessing people jostling for a spot to try some little sample by someone doling it out Far. Too. Slow.
And what I’m really not sure about is their fruit. It’s weird that their fruit never ripen, and yet lasts forever. So for those of you stuck with that huge clamshell of never-ripening plums, brought home by a well-intentioned spouse, this one’s for you:
4 large plums, pit removed, cut in ¼’s, thinly sliced
2 small sweet apples, peeled, diced how you like
½ small onion, diced
½ cup raisins
1 cup brown sugar
¾ cup red wine vinegar
1 tsp cinnamon
2 tsp freshly grated ginger
½ tsp ground cloves
½ tsp mustard seeds
Salt to taste
Sautée onions and plums until somewhat soft. Add the rest of the ingredients and a bit of water. Simmer until it reaches the consistency you like.
Yummy with pork or in a roasted chicken sandwich.
