I love this city around late spring – full, green leaves, kids voices through the open windows playing across the way, the smell of dirt, dew and flowering trees – Renewal.
Ah Edmonton, I shall never complain about your warmth.
Summer is an opportunity to meet with our neighbours on a daily basis. Kids riding bikes out front, a park in the back, late sun-sets. Earth is suggesting you should be awake as long as possible in these climes (early sleep is for winter). Bed times are mere suggestions, and dinner time: well, that’s often a mere suggestion as well. As a lover of all foods nutritious, snackable, and easily translated to a party, here is one that I plan on using throughout the summer of 2014:
A condiment inspired by a couple that exudes the warmth of an Alberta summer:
Charlene + Chris’s Green Curry Dip
1 onion, 3 garlic cloves, 1 tbsp ginger (minced) – sautée for 10 min in 1 tbsp canola oil
Add 1 tbsp green curry paste
Add a bit of water
Add 1 c. coconut milk, 1 tbsp brown sugar (or to taste), 1 chopped head of a cauliflower
simmer 30 min
Blend in processor while adding ½ c. oil
Serve warm or chilled with yummy accompaniments.
